This meal is my go-to when I’ve run out of ideas on what to cook, or when I’m short on time. I don’t know what my favorite part of this meal is – that it takes less than 20 minutes from prep to serve, or that there’s only 4 ingredients.
This recipe contains mustard, which contains Potassium, Calcium, and Phosphorus. Mustard seeds are also a source of those omega-3 fatty acids, which help promote a healthy brain. It’s also rich in anti-oxidants.
This is recommended for children 6+ months.
Dijon Chicken and Carrots
Prep Time: 5 minutes Cook Time: 10 minutes
- You’ll need
1 tbsp coconut oil
1/2 boneless chicken breast, cubed
4 small carrots, cubed
1 tbsp Dijon mustard
- Place chopped carrots into steamer. Steam for 10 minutes, or until tender enough for your baby.
- In a small skillet, heat up the olive oil. Place cubed chicken into skillet on medium-high heat. Cook for 10 minutes, constantly flipping chicken, until chicken is white all through. Remove from heat.
- Place chicken into small tupperware or baby bowl with lid. Add mustard, place lid on, and shake until mustard coats chicken pieces evenly.
